Cooking with Adeline

Since last year's cooking class with Adeline Borra of Terroirs by Adeline I have been looking forward to a repeat session. Lovely Adeline and her wonderful assistant Carlene planned a fabulous meal for us to prepare. There were 5 in the class, a couple from Colorado Springs and another younger couple from Jacksonville, Florida and moi. All the ingredients are measured out and set out on trays with the recipes at hand. We washed our hands, donned our aprons and went to work. First we went out into the garden to collect the fresh herbs we would use in the different recipes. Once back inside we were given our assignments. I had made the gougeres last year so I started working on the pistachio ice cream we were to have for dessert. Others in the class made the different courses...zucchini soup with epoisses cheese flan for the first course along with the gougeres, sauces for the rump steak main course and the financiers to go along with the ice cream. As the meal prep moved along Carlene poured us each a glass of Cremant de Bourgogne to start the wine consumption for the day. Each course was paired with a wonderful wine, 2 whites and 2 reds were chosen carefully by Adeline. After the meal was completed she poured us a tiny taste of Marc de Bourgogne which is a liquor made from grapes and very strong. To finish up coffee was served and we all waddled our way back to our separate lodgings. Lots of great conversation, recommendations for restaurants and wine tastings were shared which is a fun part of the whole experience. I will return!

Jay had a great bike ride among the vineyards dodging the harvest vehicles and harvesters. He got some great pictures.
Since we both had late lunches we opted for a quick bite and drink at our favorite Bar 66 before heading off to bed. Tomorrow we ride along the Burgundy Canal in the morning because it's too hot to ride in the afternoon.
